Folded gimbap has been going viral on TikTok and it deserves every view. It is one of those recipes that looks impressive, tastes amazing, and is shockingly easy to make. Think of it as a Korean sushi-sandwich hybrid: seasoned rice, vegetables, egg, and protein folded into a neat triangle.

What Is Folded Gimbap?
Traditional gimbap is a Korean seaweed rice roll. Folded gimbap takes the same concept but instead of rolling, you fold a sheet of seaweed into a triangle pocket. You cut a slit halfway through the seaweed, lay fillings in four quadrants, and fold it up. Cut it in half and you get a beautiful cross-section showing all the colorful layers.

My Go-To Recipe
Cook short-grain rice and season with sesame oil and salt while warm. My go-to fillings: thin egg omelet, pickled yellow radish (danmuji), cucumber strips, and bulgogi or seasoned ground beef. Take a full sheet of gim, cut a slit from center bottom to center. Place rice, egg, protein, and vegetables in four quadrants. Fold into a triangle. Five minutes of assembly.
Filling Ideas for Every Day
Classic bulgogi and egg. Tuna mayo with lettuce and carrot. Spam, cheese, and kimchi. Chicken katsu with cabbage. Avocado and imitation crab for a California roll vibe. For my daughter, I sometimes do peanut butter and banana for a fun dessert version.
Tips for Perfect Folded Gimbap
Use freshly cooked rice while slightly warm. Do not overfill any quadrant. If seaweed is too crispy, lightly mist it with water. Cut with a very sharp knife in one confident motion.
Perfect for Meal Prep
Prep fillings on Sunday. Assembly each morning takes less than five minutes. Wrap tightly in plastic wrap for lunch boxes. They hold up well for several hours at room temperature.
